A light and dry sparkling wine with a definite floral character. This wine is subtle enough to be versatile and could accompany a light starter but is equally lovely drunk by itself as an aperitif. There’s a depth of flavour and texture derived from the time on the lees and a richness of fruit. The wine has a delicious, dry and fresh finish.

COLET
Colet is a family winery based in the Penedès region of Spain, a beautiful location surrounded by forests and olive trees south-west of Barcelona. Sergi’s family have been farmers for generations and have worked their vineyards since 1783.
Sergi built experience working at Gramona (known for their excellent sparkling Corpinnat wine), he did a Masters in Champagne and worked at Pol Roger but came back to Colet in 1998. Sergi and his father decided to follow the French Chateau and Domain model and just work with their own grapes rather than buying any in for their wines.
Their vineyards are cool at night and warm in the day with a north-western exposure, giving the wines a great freshness and aromatics. Sergi thinks wines should tell of a place. This is why Colet is part of DO Classic Penedès – this means they make wines from their own estate grapes, the vineyards must be 100% certified organic. Wines are made in the traditional method, they’re 100% Reserva (i.e. minimum 15 months in bottle) and show vintage and disgorgement date on the labels.
